In 2024 we won Portugal Best Signature Roast at Porto Coffee Week with this same coffee but from the previous crop. We initially only ordered enough for the competition, however after roasting it we fell in love with this coffee. We contacted our friends at Semilla and told them that we need this coffee and here we are, fresh crop!
This coffee is absolutely everything you could wish for from a Colombian Pink Bourbon, fantastic acidity with bright florality. We certainly can’t get enough of it, especially as a pour over. If you have been paying attention maybe you will have noticed a preference towards Pink Bourbons in our coffees, with it being a frequently reoccurring cultivar.
Edil grew up surrounded by agriculture, by the age of 12 he was already working professionally in the coffee industry. He is a member of a larger worker collective of indigenous persons from the area made up of 60 Jatun Wataka-yo families – which took 25 years to gain recognition and get their reservation granted to them by the Huila government - the collective allotted 2 hectares per family. Edil has a fantastic, history behind his journey to where he is today.
Edil and Carmenza (Edil’s wife) are producing exceptional coffee, the majority of which is Caturra & Pink Bourbon. We are proud to be able to help this connection from Edil & Carmenza to you.
About the processing:
This coffee is a super clean washed processed coffee with the cherries being fermented in a dry state in a mayolica tank after being pulped.
