Last year we worked with Sookoo with their natural coffee and this year we had to get it again (see Shoondisha). However, we heard from our friends at Osito about the wonderful work Sookoo have been doing with their new washed process coffees.
Presenting as an archetypal Guji this coffee is rich in fruit and floral characteristics. This coffee is a fantastic every day driver, with great tea like characteristics as both an espresso or filter.
About the processing:
This coffee was collected at the Weessi washing station and is one of first years of Sookoo producing washed processed coffees, prior to this their emphasis was on natural processed coffees. The fully ripe cherries are pulped in an eco-pulper and then left to ferment in water for 12 hours before being removed to the drying tables.
About the roast:
To emphasise the floral characteristics of this coffee we decided to roast it very light with a short development time.
