This is truly one of our favourite coffees every year, we are always so excited to get this coffee in, this is now our second year with this coffee at our roastery. Our friends at Cultivar brought these lovely Bourbons from Puno in. We first tasted this coffee a few years back and fell in love with it for its amazing clarity of flavour with a silky sweetness and florality behind bright fruity notes.

Beyond flavour we fell in love with the story and lore behind the coffee and the people of Cruz Pata. Hailing from the region of Puno, an area rich in heritage, lore and culture. As a standing monument to the Andean culture and traditions. The geography and terrain of Cruz Pata is rough, and despite this the people of the village have managed to make agriculture a central economic foundation, with contributions from entire families to grow crops. Many of the people of the village have dedicated their lives to growing high quality coffee, such as Eulalia Chambi, she is one of the members of the village that is proud to have this outstanding coffee. The area of Puno in Sandia holds a rich history dedicated to growing these high quality bourbons, the seeds for these bourbons were first planted in the 1980’s as a part of a United Nations initiative (see Alternative Development In The Andean Area, UNDCP, 2001) and to this day this area continues to excel in these washed coffees.

About the processing: The coffee is depulped and then followed by a dry fermentation of ~25 hours. Following this it is washed with clean water. It is then dried for 12 days 5 hours a day. This exceptional attention to the drying is a critical reason for the incredible clarity in the cup.

About the Roast: We roasted this coffee very lightly to emphasise the delicate floral components of the coffee, focussing on maintaining the brightness that this coffee and the beautiful Puno Bourbon has to offer.
