Another, delicate flower bomb from the incredible Monkaaba Collective via Semilla. We are super happy to have this very limited lot in our lineup, we only purchased a very small volume of this coffee so make sure you grab it while it’s here.
Yeni is based in San Agustin, Huila and her farm is 5,5Ha, all planted with coffee with the lots being: Geisha, Pink Bourbon and Papaya, she is clearly committed to high quality lots and it shows in the cup, the coffee is meticulous in sorting and processing becoming the epitome of a clean cup. But this was not always the case, in fact until 2017 their coffee was sold as parchment at the local market.
About the processing: Cherries are harvested every three weeks. The coffee is tumbled and then fermented in plastic bags for 48 hours. The coffee is left in a ceramic tank with a small amount of water for 36 hours, then processed through a mechanical washing system that uses very little water (0.3 litres per kilogram of coffee). After washing, the coffee is drained for 4 hours before being taken to the drying area for 18 to 22 days.
About the roast: This coffee is now our lightest roast to date, we decided that this was how we could best capture the floral aromatics of the coffee. We used halogens in early stages of our roasting to attempt to open up the structure to facilitate easier extraction whilst maintaining these inherent floral characteristics. T
