Our project
We are a project first coffee roastery. We like to see coffee as more than just a “seed-to-cup” journey, transcending sensorality and holding accountability in the way we source and purchase coffee. Ensuring that every actor along the supply chain is fairly compensated even beyond the farmgate, working with partners who we trust, sharing our passion for sustainability. We source coffee because of the project, passion and people behind it.
We focus on high quality coffee produced by smaller scale producers, who perhaps do not have the same level of market access as the more prominent producers. Trying to reappropriate the word specialty away from the gate keepers of the industry who have become synonymous with quality. We source coffees that are clean, with high flavour fidelity and less intense processing methods, focussing on the cherries grown by the farmers we work with – opposed to highly processed coffees from cherry buyers.
We are working to ensure long term relationships with the coffee growers, small holders, farmers, producers – whoever we work with. To guarantee a stable economic relationship – regardless of crop quality year to year. Coffee buyers and roasters are typically in a position of power in these “relationships”, often creating contracts using SAS-NANS (Subject to approval of samples – no approval no sale). We at von&vonnie are comitting to buy the coffee from the producers we work with year on year and not abusing contracts that put the buyer in a position of power.
Sustainability, traceability and transparency
Access to the specialty market is complicated for small holders as they may not have the facility to market themselves to the global northern markets. This is why it is important that the partners, importers & exporters that we work with have the same dedication to their projects as we do. Importers like ThisSideUp, Semilla and Primavera work on representing groups with a large emphasis on transparency and marketability of the small holders that they work with.
Words like sustainability, traceability and transparency are used frequently within our industry. Unfortunately, companies are frequently investing in the marketing of these terminologies as opposed to working on these principles. At von&vonnie we started the company to focus on these things from day one – we are not perfect, but we constantly work to improve on these aspects. Frequently asking ourselves what can we do better to ensure we stick to our initial mission.

about the founders
Morgan von Mantripp and Yvonne Spresny are the founders of von&vonnie. Their interest in coffee started independently, both fell in love with the cherry before falling in love with each other. Regardless of their university degrees, both were determined to follow their passion over a traditional career path.
A fantasy café called „von&vonnie“ developed very soon after they met as a shared dream. In September 2023, they started to take action to make this a reality – the idea of just a café turned very fast into a project, highlighting fair and seasonal coffee sourcing and roasting.
„We love our café. It gives us so much of the effort we put into this project back, creating a community and welcoming space for everybody. It’s the little dream we had in the beginning of our 20s looking at us every day, it’s beautiful. With the roastery, we try our best to create a significant positive impact from the farm to the consumer and strive for better every day – this is what makes our work incredibly meaningful.“
