This cup is truly astonishing, with hints of that typical expression of a Brazilian coffee with deep bassy flavour with these beautiful high clear notes of tropical fruits and fantastic sweetness. This coffee went beyond our expectations from previous years and we are honoured to present it once more. This coffee is purchased direct trade from the Barbosa family via their European branch. The DBarbosa coffees are our longest relationship, and we plan to continue working with them for many years to come. The cups from Barbosa are always incredible and honestly it is hard to choose the right coffee from them as they all taste so great.
About the processing: The cherries selected for this lot were taken from the mid-upper sections of the tree and from the skirts of the plant which is optimal for natural processed coffees. The cherries were mechanically selected, then on the same day they were placed into plastic barrels where they were left to ferment for three days. The beans were then transported by tractor from the farm for the drying process.
About the Roast: Normally we roast our Barbosa coffees medium-light, however this coffee we wanted to ensure we bring out the incredible fruitiness developed within this coffee. So we roasted it lighter than our usual roasts.
