Danilo is a 3rd generation coffee farmer and took over his first plot of land in 2009. He has invested love and passion into his project at Finca Los Cedros to expand his crops in quantity and quality. Coffee is for Danilo, and his families, only source of income and they rely on the income from their production as a means of sustaining themselves, however, Danilo is not only growing the coffee out of a means of sustenance but also as a product of heritage, tradition and passion. Recent years have brought tougher times upon production with labour shortages and climate charges presenting challenging times. This coffee is a testament to the legacy of Danilo and his family, with expertly processed and sorted coffees, each year Danilo is striving to produce a high quality product. In the cup we can taste this with an incredibly high fidelity natural coffee with excellent flavour separation and bright acidity. Even though this coffee undergoes advanced fermentation processes the coffee does not present as overly complex or “fermenty tasting” it is instead bright and juicy with great clarity.
About the Processing: Cherries are harvested at peak ripeness and then undergo a 50-hour anaerobic fermentation in a plastic bag. Then they dry in sunlight for 20 to 25 days with a plastic cover to regulate the temperature.
